Grilled Figs with Sabayon

When the fig season starts, you should embrace it to the fullest. These deliciously sweet summer fruits are a great addition to homemade sabayon, known as zabaglione in Italy. This is a fluffy dessert made with egg yolks and Marsala wine. Due to its fresh, sweet flavor, it’s a perfect dessert during BBQ season. Ingredients and Method

Ingredients

  • 8 figs
  • 3 tbsp. sugar
  • 1/3 cup Strawberry Pulp Vinegar
  • 4 eggs
  • 4 tbsp. white Marsala wine

Method

  1. Remove the stems from the figs and cut the tops lengthwise.
  2. Place the figs in an oven dish or a cast-iron pan and sprinkle with sugar.
  3. Then sprinkle the figs with 1 Tbsp Strawberry Pulp Vinegar.
  4. Place the dish on the grill or in the oven and roast the figs for approximately 10 minutes.
  5. Next, make the sabayon (light custard).
  6. Separate the eggs and mix the egg yolks with the leftover 2 Tbsp Strawberry Pulp Vinegar and the Marsala.
  7. Whisk the mixture in a double boiler until light and airy.
  8. Pour the sabayon over the figs and serve.
