Easy and Delicious Greens Salad



This salad recipe by Paula Murgo-Shaffer is so easy to make, but delicious in all the best ways. The sweetness of the dried fruit and walnuts compliment the vinaigrette. On top of this the cheese crumbles add that needed richness and saltiness, bringing the whole salad together! We loved this entry for our 2022 Salad Recipe Contest and had to share it all with you.

Ingredients and Method
Ingredients
- 10 oz Mixed Green Salad Mix
- 10 oz Baby Spinach Leaves
- 1 cup Glazed Walnuts
- 1/2 cup Craisins or Dried Cherries
- 1/3 cup Blue Cheese or Feta
- 1/4 cup Nocellara EVOO
- 1/2 tsp Shallots (Chopped)
- 2 tbsp Marc De Champagne Vinegar
- 2 tbsp Maple Syrup
- Black Hawaii Salt
- Fresh Ground Black Pepper
Method
- Whisk together the shallots, vinegar, olive oil, maple syrup, salt, and pepper to create the vinaigrette.
- In a large salad bowl toss together the mixed greens and baby spinach. Add the Vinaigrette mixture to the greens and toss well.
- Sprinkle the dried fruit (Craisins or cherries), cheese crumbles and glazed walnuts to finish the salad.
