Lemon Pomegranate Muffins

Muffin Ingredients:

  • 3 cups All-Purpose Flour
  • 2 cups Granulated Sugar
  • ¾ teaspoon Baking Soda
  • ½ teaspoon Kosher Salt
  • 1½ cups Pomegranate Seeds
  • 1 cup Sour Cream (room temperature)
  • 1 cup Unsalted Butter (melted)
  • 1 tablespoon Lemon Olive Oil
  • 4 large Eggs
  • 1 tablespoon Poppy Seeds


Streusel Ingredients:

  • ⅔ cup Granulated Sugar
  • ⅔ cup All-Purpose Flour
  • 1 teaspoon Poppy Seeds
  • ¼ teaspoon Kosher Salt
  • ¼ cup Unsalted Butter (cubed and softened)


Pomegranate Vinegar Molasses:

  • 3 cups Pomegranate Juice
  • ¾ cup Granulated Sugar
  • 1½ tablespoons Pomegranate Vinegar
  • 1 tablespoon Limoncello Vinegar
  • ¼ teaspoon Kosher Salt
  • ¼ teaspoon Ground Black Pepper



To make the molasses; in a medium saucepan, bring all molasses ingredients to a boil over medium-high heat. Reduce heat to medium-low, and simmer until thickened, syrupy, and reduced by about two-thirds, 25 to 30 minutes. Let cool completely, then refrigerate overnight. Refrigerate in an airtight container until ready to use.

To make the streusel; whisk together sugar, flour, poppy seeds, and salt. Using a pastry blender, cut in butter until mixture is crumbly. Use immediately.

To make the muffins; Preheat oven to 350°F. Butter and flour 2 (12-cup) muffin pans.

In a large bowl, sift together flour, sugar, baking soda, and salt. Stir in pomegranate arils.

In another large bowl, whisk together sour cream, melted butter, eggs, poppy seeds, and olive oil. Fold flour mixture into sour cream mixture until well combined. Divide batter among prepared muffin cups. Sprinkle each muffin with about 1 tablespoon Poppy Seed Streusel.

Bake until golden brown, 20 to 25 minutes. Let cool in pans for 5 minutes. Remove from pans, and let cool completely on wire racks. Drizzle with Pomegranate Molasses.

Lemon Pomegranate Cocktails


  • 3 oz Lemon Vodka (Or plain vodka)
  • 3 oz Pomegranate Juice
  • 1 tbsp Pomegranate Vinegar
  • 2 oz Lemon Simple Syrup
  • 4-5 oz Sparkling Soda
  • Lemon Slices (For garnish)
  • Pomegranate Arils (For garnish)



Chill 2 cocktail glasses in the freezer.

Mix the vodka, simple syrup, lemon juice pomegrante vinegar, and pomegranate juice in a cocktail shaker filled with ice. Shake until ice cold.

Remove glasses from the freezer and fill with ice. Pour the mixture into 2 glasses and top with sparkling soda.

Garnish with a lemon slice and pomegranate arils.
