A Semifreddo is a frozen dessert similar to ice cream. The main ingredients are egg yolks, sugar, and cream. It has the texture of frozen mousse and is a unique and wonderful way to enjoy a frozen treat.

- 2 c Whipping Cream
- 1/2 c Sugar
- 3/4 c Pistachio Spread
- 5 oz Pistachios
- 3/4 c Raspberries
- 4 Eggs
- Pistachio Nougat
- Salt
Method
- Finely blitz the pistachios in a food processor. Separate the eggs into 2 different bowls. Add a good pinch of salt to the egg whites and whisk until stiff. In another bowl, beat the egg yolks with the sugar and the Pistachio Spread. In a third bowl, whip the cream until stiffened slightly.
- Stir the pistachios into the egg yolk mixture. Add half the whipped cream to the pistachio mixture and fold to mix thoroughly. Now add the remaining whipped cream.
- Finally, carefully fold the egg whites into the pistachio mixture. Be careful not to beat out all the air. Pour mixture into a cake tin.
- Let the ice cream set in the freezer for at least 4 hours. Remove from freezer 15 minutes before serving and garnish with raspberries, pistachios and chopped Pistachio Nougat.
