2023/2024 Novello is here!

 

Harvested November 28th, 2023 this Tuscan Novello has wonderful fresh notes of almond, is mild in spice, and has an intense bitterness. The aroma is clean, fresh, and grassy with the prominent smell of ripe olives.

This Tuscan Novello is made from Leccino and Frantoio olives. The Tuscan soil, the sea breeze, and the various types of grass under the olive trees give the olives their typical smell and taste.


What Is Novello?

Novello or Olio Nuovo literally means “new oil” in Italian. It refers to extra virgin olive oil that has just been harvested and pressed. It is traditionally drizzled over toasted bread and enjoyed in good company.

Olives are picked starting at the beginning of October. After picking from early in the morning, the olives are brought to the mill for cold pressing as soon as possible to ensure the highest quality. The very first pressing of these olives makes an extra virgin olive oil with a strong flavor and bright green color, characteristics that come from the high concentration of polyphenols.

 

Easy Usage Ideas

This EVOO should be consumed as soon as possible in order to maximize its flavor and the joy of tasting it. Novello stands out for its particular intensity on the palate, an authentic expression of the freshly-pressed olives.

Enjoy in the most simple and traditional way with a simple slice of bread topped with oil, sometimes flavored with garlic or fresh tomatoes and kale. It’s also an excellent addition for soups and minestrones, like the classic ribollita, its heat emphasizing the flavors and aromas of this precious oil.

 


 

Novello Vinaigrette

1 cup Novello Extra Virgin Olive Oil

1/3 cup Marc de Champagne Vinegar

2 tbsp minced Shallots

1 tsp Dijon Mustard

salt and fresh ground pepper to taste

 

Put all of the ingredients in a bowl and whisk. If you have a dressing shaker or mason jar, place all ingredients inside and shake thoroughly to combine.
