What Is Novello?

Novello means "new" and refers to the earliest harvest oil that is freshly pressed from green olives. It ushers in the beginning of the olive harvest season. Our Novello is unfiltered and has an intensely fresh aroma. The flavors have been described as robust, spicy, and bold without being overpowering. 

Easy Usage Ideas

- Drizzle over meat

- Finish roasted vegetables

- Use to poach white fish

Novello Vinaigrette

1 cup Novello Extra Virgin Olive Oil

1/3 cup Marc de Champagne Vinegar

2 tbsp minced Shallots

1 tsp Dijon Mustard

salt and fresh ground pepper to taste

Put all of the ingredients in a bowl and whisk. If you have a dressing shaker or mason jar, place all ingredients inside and shake thoroughly to combine.
