White Asparagus with Lemon Pesto & Lemon Olive Oil



Spring is full of fresh produce and one of our favorites is white asparagus. We love to pair this vegetable with our Lemon Pesto to add even more freshness!

Ingredients and Method
Ingredients
- 30 spears Peeled White Asparagus
- 2 1/2 tbsp Pine Nuts
- Lemon Olive Oil
- Pesto al Limone
- Basil (for Garnish)
Method
- Peel the asparagus and cook in lightly salted water until al dente (approximately 5 minutes).
- In the meantime, roast the pine nuts and let cool. Arrange the asparagus on a serving dish and season generously with Pesto al Limone.
- Finally, garnish with the roasted pine nuts, basil and a few drops of Extra Virgin Olive Oil with Lemon.
- Tip: Especially delicious with a poached egg with Egg Salt!
