Ingredients and Method



  1. Cut the salmon into small cubes. Finely chop the chili pepper and basil leaves and add them to the salmon.
  2. Mix the olive oil, the juice of half a lemon and the Chardonnay Wine Vinegar with the salmon.
  3. Season the salmon tartar with salt, pepper and dried coriander seeds.
  4. Cut the fennel into small slices and mix them into the salmon tartar.
  5. Transfer the salmon tartar to four plates and garnish with a slice of lemon to taste.
