Ingredients and Method
Ingredients
- 1⁄2 FENNEL
- 1⁄2 DRIED RED CHILI PEPPER
- 12 oz FRESH SALMON
- 1/4 cup LEMON OLIVE OIL
- 4 leaves FRESH BASIL
- 1⁄2 LEMON
- 1 tbsp CHARDONNAY WINE VINEGAR
- 1 tbsp DRIED CORIANDER SEEDS
- SALT AND PEPPER
Method
- Cut the salmon into small cubes. Finely chop the chili pepper and basil leaves and add them to the salmon.
- Mix the olive oil, the juice of half a lemon and the Chardonnay Wine Vinegar with the salmon.
- Season the salmon tartar with salt, pepper and dried coriander seeds.
- Cut the fennel into small slices and mix them into the salmon tartar.
- Transfer the salmon tartar to four plates and garnish with a slice of lemon to taste.
