Ingredients and Method

  1. Warm the barbecue up to about 215 °F (100 °C). Brush the Beer Sauce all over the pork belly and let marinate for an hour. Let the pork slow-cook on the grill for about 6 hours, basting it regularly with more Beer Sauce.
  2. To make the dressing for the coleslaw, combine the mayonnaise, Greek yogurt, Beer Vinegar, and Beer Mustard in a large bowl and stir until well mixed. Julienne the carrots, white cabbage, and chives (into short, thin strips). Add the chopped vegetables to the dressing and mix well.
  3. Peel the mango and chop into small bits and then combine with the Mango & Chili Sauce. Serve the mango chutney with the pork belly and coleslaw.
