Description Allioli comes from Spanish Catalonia and is historically the oldest and most popular of the garlic sauces from the Mediterranean region. The name allioli is a combination of the Catalan words for garlic (all) and oil (oli). The sauce is made from a very good quality olive oil, garlic (allium sativum) and salt. A number of drops of vinegar or lemon juice can also be added to the sauce. It is delicious with toasted bread, cheese, vegetables, meat, fish and shellfish. Allioli also tastes very good with fried mushrooms in a white wine sauce and can also be used as a substitute for garlic.
